How disappointing is it to make a great batch of spaghetti sauce and have it turn out sour? When I lived in Little Italy, the Italian housewives used to tell me to balance the sour by adding salt and sugar - some even added chicken livers. I really never liked adding all that sugar or salt.

Today our homemade pasta sauce was a bit tart, so I sprinkled in a pinch of baking soda, stirred it well, and tasted. After a few additions, the sour taste was gone and the sauce was FABULOUS!! Much better than adding a ton of salt and sugar or even chicken livers!!! Smile

I love chicken livers, but I can't picture them in spaghetti sauce! Laughing I have a tomato bisque recipe that uses baking soda to neutralize the acidity of the tomatoes.

Very good suggestion - I've been having problems with tomatoes and tomato sauce causing heartburn lately. I will have to try this if we have pasta again before the baby is born. Smile I've been adding a little agave nectar to my sauce to sweeten it a bit, but it doesn't cut the acid.

Many Italians will finely chop some carrots and saute them along with the onions. Natural sweetener and more vitamins...

Just looking at food seems to give me heartburn at this stage!!! Rolling Eyes Actually, my heartburn was pretty mild last night after eating this sauce. Usually I would be eating antacid several times during the night after eating red sauce, but I only took 2 tablets before bed.
