| Thank you for your help. I am a middle-aged woman living in Washington state and just recently learned that all my respiratory problems are actually Celiac Disease. Unfortunately, I learned at the same time that I am allergic to dairy products and eggs. I long for a recipe for tasty bread w/o gluten or eggs. Natalee |

Hi, Natalee. I am from Washington State as well - Just north of Tacoma. I hope you will feel welcome here. Poke around in the sticky topics at the top of each forum section. They contain a lot of good threads to get you started.
No such thing as a stupid question, so feel to post, ask questions and make yourself at home. We've got GF pizza (if you can wrestle it away from Al and TEC.)

| I read most of those recipes prior to joining the forum. Most all of them require eggs. I've tried baking some of the recipes using an egg substitute, but that doesn't work. How do I post a question in a section to ask for a bread recipe? I tried posting one, but I don't think it went anywhere. Thanks. Natalee |

Probably the best section is Recipe Discussion. Click on "new Topic" and put whatever stipulations you have for the recipe, and click "submit" at the bottom. If anyone has an idea for a recipe that might work for you, they will post in your thread. If you want to be notified when someone posts, clich the box that says "Notify me when a reply is posted" before you click submit. Or you can check back any time you want to see if anyone has posted.
Hope this helps. Have you checked out any of the books by Carol Fenster? She deals with multiple food intolerances and many of her recipes do hot have eggs. We also have a post around here from Fidissimus that deals with baking without eggs. You may be able to modify one of our posted recipes with one of those substitutions. Let me look around to see if I can find it.

It is posted in the forum you started your thread in - recipe discussion. You can read it, I can read it, and anyone else who reads the forum can read it. We aren't having a private chat, if that's what you mean. Someone else will come along and post in the thread if they choose to.

| If that's the case, maybe more people will have some ideas. I like what you have shared with me so far. I went to amazon.com and checked out some of Carol Fenster's books. I will probably take a look at some in Barnes and Noble next time I am in Spokane. By the way, I live in the worst part of the world for people with CD. I am west of Spokane right smack dab in the middle of hundreds of wheat fields! Also, I need to add there are more limitations to my diet. My husband and I are vegetarian. When my doctor told me of my allergies to dairy, eggs and gluten all I could think was, "What will I eat???" My doctor is very sympathetic...his wife has CD and is diabetic. I think I'd rather have my problems than hers. Nat |

Check your local library for books. If they don't have them, they may be able to get them through Interlibrarly loan. It is a great, inexpensive way to try new books without shelling out the $ for them.
Being Gf and vegetarian can be challenging, but it is doable. Are you vegan? _________________ -Colleen

I, too, am vegetarian in addition to having celiac, and I try to limit my eggs. I've found lots to eat through experimentation and multiple cookbooks. The latest one which might really help you is called the "Food Allergy Survival Guide." It covers all of the major allergens, in addition to celiac. I also have a vegan GF cookbook that I got from Amazon - some of the food in there is amazing. As for bread recipes, I'm still experimenting, but the latest one turned out pretty well. I took the high fiber flour mix from the Living Without magazine, and added different ingredients based on an amalgam of other recipes. I use flax meal for the eggs. If you'd like the specific recipe, let me know and I'll try to get it on here in a few days - I don't have it with me right now. I have also found that baking bread in a clay pan (I got mine from the Pampered Chef) really helps, as does using an instant read thermometer and baking the bread until the internal temp is 209-211 degrees. And remember that GF bread dries out very quickly, so except for when it first comes out of the oven, it needs to be sliced, separated by pieces of wax paper, and frozen. I always take a nice, big piece before I store it - it is the highlight of my day (week, month...). Just remember, this is all very overwhelming now, but it does get easier and this forum will help you alot. I check it every day. Thank you all for the help. Yes, Lizbupper, I would like your recipe. I use flax meal for other baking as a substitute for eggs. I am anxious to try your recipe. And thank you, cruelshoes, for the book suggestions. I know our small library doesn't have any of these books, but they might get some if I ask. They are fairly agreeable.
