So, as I've mentioned before, I'm starting a new job Monday. I'm really excited and nervous at the same time. I'm also a little worried about eating GF. This will be my first job since I've gone GF. I graduated in May and went home for a month to be with my grandmother who had a massive stroke. So, I've had a few months off and now it's time to get to work! I've been successful at being GF thus far, but I've also been able to eat whenever I want and whatever I want b/c I've been home a lot.
I don't know the set up of the office I'll be in. It's at Hopkins in a mental health day program/clinic. There is a large cafeteria for the patients but I'm assuming we won't eat there. I don't know what my schedule will look like and how long I will have for lunch (although I'm guessing the standard hour haha).
Anyway, does anyone have suggestions for easy to pack lunches? I don't know if I'll have access to a fridge and microwave so I'll have to see next week. I'm thinking of taking a couple larabars and lots of fruit for the first day b/c I really don't know what I'll be able to make there. Also, keep in mind that I'm a HORRENDOUS cook I cook eggs and (GF) pasta and that's pretty much it. Oh, I just was taught how to use my rice cooker so I can make some rice and veggies the night before to bring. Any other ideas though? Thanks! |

Do you have a little cooler that you can put some ice packs in?

If you are not sure about a microwave...maybe a thermos would be good. That way you could expand your options a little. _________________ Rachel |

What about a sandwich and chips? Since you don't know what you'll have access to the first day, I'd make a sandwich that can sit out for awhile if it has to. Plus they don't take long to eat, in case you don't get a real lunch break. And everybody can make a sandwich.  _________________ Ostrich :>--O==={

caseygirl, not sure if its a bit too late to chime in here. but i make my kids lunches everyday. i bought the backpack thermos lunch totes from walmart for my kids, and went down to the aisle with all the ziplock stuff, i bought thermal canister for 1.50 which is good for spaghettis and soups, i also bought the sandwich holders not ziplock, but the other brand that actually locks tight so i can put in tacos or what have you as well as sandwiches, i also bought the locktight leak proof other little canisters for puddings fruits vegetables etc. once you get there, i am sure you will see it if it interests you to go this route. i also buy pudding snacks the walmart brand peaches, bannanas, apples, pumpkin seeds, lays stax etc. i also use the walmart brand corn tortillas for hot dog raps etc.
this thermos lunchbox is the best, as it just wipes clean, has a holder for a drink, and two insulated areas, the bigger one which fits alot of food, and also the smaller pocket which holds a sandwich also. lots of space although it doesnt look that way.

How about canned chicken? I drain it and mix with Best Foods Light Mayo (GF!) and a bit of black pepper, garlic salt, dried cranberries, and dried onion. YUM! You can take this in a tupperware and eat with corn tortilla chips, fruit...keeps well in fridge.
