I have been doing some gluten free baking, and what I have made so far has had a strange flavor. Not to bad, especially when with other things, but still not a taste I like. Could it be the xanthan gum? That is the only thing in my baking that I haven't worked with before.
Is there any way to replace this, or to cover up the flavor? |

| I have been using bobs red mills gluten free flour mix and some rice flours. |

Are you talking about this mix? If so it has garbanzo bean flour, which is what you might be tasting. I'd try a different flour mix. There's all sorts of options. You could even make your own. _________________ Ostrich :>--O==={

I'm thinking it might be the bean flour too. I've never noticed a discernable flavor to the xanthan gum, not sure if others have. _________________ Steph |

yep that is what it was.
I made pie and I noticed the flavor less and less each time I had some. It has been three days and it is almost gone. |

It's the bean flour. If you undercook it there will be an odd almost bitter taste. _________________ Cheers!
