I have been doing some gluten free baking, and what I have made so far has had a strange flavor. Not to bad, especially when with other things, but still not a taste I like. Could it be the xanthan gum? That is the only thing in my baking that I haven't worked with before.

Is there any way to replace this, or to cover up the flavor?

Are you baking with bean flour? Some people are sensitive to the taste of beans.

Are you talking about this mix? If so it has garbanzo bean flour, which is what you might be tasting. I'd try a different flour mix. There's all sorts of options. You could even make your own.

I'm thinking it might be the bean flour too. I've never noticed a discernable flavor to the xanthan gum, not sure if others have.

yep that is what it was.

I made pie and I noticed the flavor less and less each time I had some. It has been three days and it is almost gone.

It's the bean flour. If you undercook it there will be an odd almost bitter taste.
