I am new at GF cooking and would like to make my late Mom-in-Laws "Wackie Cake".
Question is can I use the Brown Rice Flour Mix form Annalise Roberts [u]Baking Classics[/u] in place of the all purpose flour.
Mom's recipe was the good old chocolate cake mixed in baking pan. No eggs,but has baking soda, cocca,vinegar,salad oil and water.

When you're done at your house, we got a a few flower gardens that could use some TLC. You make house calls? Neither Peg nor I have a green thumb.

The brown rice flour mix is a good mix, but I'm thinking you might not be able to get away with using a recipe that doesn't require eggs. Eggs give GF baked goods a lot of needed structure. I'm wondering what would happen if you threw a couple of eggs in? Also you would need to add xanthan or guar gum, because the BRF flour mix doesn't have any in it. Maybe someone else will have an opinion.

I am not sure about the orginal cake recipe. If it doesn't call for eggs, then you probably get the rise out of the baking powder/soda and vinegar.
If the orginal called for eggs and you do not want to use eggs, try using 1Tablesppon Flax Meal 2 Tablespoons water for each egg called for. Let it sit for 10 min and then whip.
I would use 1 tsp of guar gum or xanthan gum per 1 cup of flour called for in the recipe.

Thank you for all your input. The day is rainy and a wonderful time to try.
And believe me I have more then my share of weeds to pull.
I have a huge veggie garden and trying to get it in shape for our little Granddaughters to enjoy. We put 7ft. fences around it this year to keep the deer out. So far so good.
