Hi I am new here, and was just dx last week. Can anyone give me some quick easy recipes that are gluten free, or tell me where to look. I have found lots of recipes that are gf, but they asume I can already cook Smile Right now Im just eating fruits, and veggies, untill I catch on. TX

Embarassed I didnt even see the recipe section. Your right there are alot. The thing is Im cooking challenged, so it has to be super easy w// not alot of ingredients....like the tatar tot casserole.

Hehehee The nice thing about GF cooking - it lends itself very nicely to simplicity. With a few basic simple ingredients, you can make yourself some pretty darn good eats!

a plain Chicken breast seasoned with Mrs. Dash [or Penzey's spices if want a bit better]
Baked potato [in oven or microwave].
Fresh green beans sauteed with onions and a bit garlic and olive oil.

Thank you very much. Im thinking chicken enchiladas w/o the tortillas should be gf. Ill have to check refried beans

We get Old El Paso Refried Beans. The great thing about Old El Paso is that they are a General Mills brand. General Mills products will disclose all forms of gluten [wheat, barley, rye & oats] - so if you read the label, you can tell if it's GF! Cool

You can always use corn tortilla's or Trader Joes has rice tortillas.
