I make buttermilk pancakes just about every morning for my children. I don't buy buttermilk, so I tried the buttermilk powder but wasn't happy with the results. So I tried the old standby of vinegar and milk. It was a bit better. Then I ran out of milk. Rolling Eyes

I went to bed wondering what I was going to use for buttermilk in the morning. When I woke up, I had an idea. I needed 2 cups of buttermilk, so I used 1 cup plain yogurt and 1 cup water. It was perfect! The pancakes were outstanding in flavor and texture. They rose beautifully and the children raved about how great they were.

Necessity is the mother of invention!

Thanks for the tip, Isto. My buttermilk starter died, so I haven't been making my own lately. But I always have homemade yogurt in the house. I am going to have to give your method a try.
