Yesterday I finally bit the bullet and bought a new bread machine for GF baking. I just was not having good luck with hand-made GF loaves. They were always too short and dense. I bought a Cuisinart CBK-200, and made my first loaf today. I used Carol Fenster's Hearty Yeast Bread recipe on p. 195 of her Gluten-Free Quick & Easy cookbook. It made a wonderful loaf that is as high as any traditional sandwich bread. It was perfectly cooked in the center, and the crust is beautiful. I'm very happy with the results. When it was finally cool enough to slice the texture and crumb of the loaf were just what I hoped they would be. I couldn't get a piece buttered fast enough. Delicious!!
The machine comes with a GF cycle, which I used. It also has a timer that beeps when the machine is done kneading, so you can take the paddle out to avoid a big hole in the bottom of the loaf. It was a bit of a sticky job getting the paddle out. I'd spray my hands with Pam the next time, but I think it's worth the trouble to take out the paddle.
One word of warning....In the instruction book that comes with the machine there is a list of GF ingredients on page 18. They list rye flour and semolina as being GF, however none of the GF recipes in their booklet called for these. Just be aware if you are new to GF baking rye flour and semolina are NOT GF. I will be contacting them regarding this error.
Overall, I am one happy camper this afternoon. I finally see French toast, and grilled cheese sandwiches on the horizon again!  _________________ Steph |

Woo hoo!! Good for you! Doesn't it feel great?!?
Last week, I dusted off my bread maker and we made a loaf of Red Mill's favorite sandwich bread. It came out pretty good. This week we made the Gluten Free Pantry Sandwich bread. That would have been better if we hadn't left it in the bread maker all night. It was VERY well done in the morning.
Previous attempts at following recipes from books resulted in bricks. (I think I was also trying to sub out rice flour since I was sensitive to rice when I was first diagnosed...) Using the bread mixes seems to make a big difference - that and having my hubby put the ingredients into the bread maker...
There's nothing like a nice loaf of fresh homemade bread!!
