I'd be nervous about telling them that cornmeal is ok? also corn torillas as they both can have wheat flour mixed into them?

Yes Al, I know it's been a while but I figured I could answer this one question to Sweetea. We don't really have cornmeal, except for oriental food markets and only for people who know about Polenta. Like I mentioned earlier, limestone is added to white corn to remove husks and "cook" it. Water is added to the resulting flour to make the dough. So, corn tortillas are totally safe!
And one more thing, the corn starch commonly used here in Mexico is "Maicena," a brand by UNILEVER. A while ago I discovered in horror that is actually a mix that includes wheat in its ingredients!!!! I've already written to them asking them to then modify its name to batter mix rather than just cornstarch, but haven't heard back from them... I've since then found imported American cornstarch at the oriental market and have had no problems. So maybe Al, we need to modify that cornstarch line on the menu card. What do you think? Gotta go.

Sweatea - yeah as I was re-reading that i was wondering about the cornmeal too - thinking it should be removed. If I remember correctly I grabbed the text of that from a website and modified it. This was done years ago and I've learned a bit more since then...

I'll remove the cornmeal/polenta. Maybe I can clarify the corn tortillas by adding "no wheat flour". Remove the cornstarch or say pure cornstarch [no wheat].

I'm glad you posted something because I'd forgotten how to access this site... it's been over 2 years? I'll gladly make the changes and add things here and there since we've both learned so much over the years... However, I'll take a look at it later tonight because right now I'm feeling a little under the weather... I got cross-contaminated somehow and I feel terrible!!!! Sad Can't think straight, not that I ever could... Very Happy TTYL!

I can't believe it's been that long! Anyway, hope you're fine. I was wondering whatever happened to the dining card and how can I have access to it to modify it/update it? I can't find it! I've forgotten how to do things on this site!!! Sorry!!! I think you sent it to me and then you posted the changes? Let me know... Regards!

IRIS! Long time no...type! Heheheeee

I haven't had a chance to really update the english part of the card. My life has been a just a blur this past year. As far as getting the text, you can go up to the posts above - select and copy the text and paste it into a word processor or paste it into a new post. You could also go to a selected post and click the "Quote" button - this will start a new post with text you want. You can erase the text you don't want.

We've been talking about taking a trip back to Riviera Maya next year....so I may need get this updated by next Feb. or March. Wink
