I have been recently researching corn allergies. I thought that it might be good to post what I find so if anyone else is in need of this information, I can save them a few hours of research.

I am not an expert. I am just posting what I find. If you have experience and can help by sharing what you know on this particular allergy, I know that I would appreciate the help and that others will also.

I will try to post only things that pertain to GF diets and Corn allergies as well......... If you notice that something got past my rereading, please alert the Moderator (AL) or myself so that we can get it corrected before I lead someone astray.

Last night, I tried this combination as a replacement for my regular Baking Powder that is not corn free. I used this in combination with baking soda, and buttermilk to make biscuits and it really worked well with the bread dough. We really liked how light the biscuits turned out.

Gluten-free baking powder

1/4 cup baking soda(1 part)
1/2 cup cream of tartar(2 parts)

Mix well and keep in an airtight container.

I'll have to try that.. have you tried Featherweight Baking Powder? My local health food store found this for me, however, I have also seen it on www.allergygrocer.com under gf/cf and corn free search. .... if you didn't want to make your own.

I saw that GF Pantry has a new item it is Potato Starch based baking powder. I was going to see if my local store can get this item in. I was craving biscuits and could not wait, so I searched online and found a simple recipe and decided to try it.

Now to get a source for cream of tartar in bulk.........(I bought out Winn Dixie's supply when they were going out of business. It was 88 cents a container. I checked at the store and they were wanting $4 for the little container.)

Have you checked Sam's Club? The Sam's here had the bigger containers of spices and baking stuff, but I've never looked to see if they have cream of tarter. Tone's sent me a GF list, and their cream of tartar is on it. The list is one they mailed me last summer. I don't know about the corn, though.

Fidissimus,

So sorry to hear that your niece may be sensitive to corn. I have noticed that in many cases there is a level of sensitivity to corn. For example, Matthew's allergy to corn is rather high; but unlike Mr. P, he does OK with most paper products and such. Hopefully, your niece's allergy isn't too strong.

Regarding your question about honey; Matthew tolerates pure honey quite well. It's not something we use that often, but he's never had a reaction to it that I know of.

Has she been tested yet? Beware, corn can be a hard allergy to detect. The standard blood and skin tests came back negative for us, but the patch test results were unmistakable!

Good luck to your niece; I hope it turns out that she's not allergic.. or has a very mild allergy!

I'm guessing if you buy pure honey, it's fine. If you buy a honey syrup or similar, it's probably cut with corn syrup. I know one of my friends was distracted by her kids while shopping, grabbed a bottle of what she thought was honey from the shelf, and when she got it home found that it had corn syrup in it.

Thanks for the list, this is helpful. My husband is somewhat sensitive to corn products. He has no problems with fresh corn or lime-treated corn such as that found in Mexican cuisine, but things like untreated corn flour (as found in Mrs. Leeper's pasta) and refined stuff cause him problems- not GI but restless legs. It's fascinating to see how corn derivatives are in things I wouldn't have ever suspected.

We're pretty sure it's the corn now. We've eliminated it out of her diet (as best we can but it's tricky!) and she's feeling a LOT better. That's the good news. The bad(ish) news is just seeing/realizing/learning that corn is at least as pervasive as gluten as far as what kinds of processed foods it can hide in. Ridiculous!
