Congrats, MrsP! It is kind of fascinating, isn't it, the results we get from cutting out the grains?
For almond flour there's of course elanaspantry.com but she often uses what I consider kind of "fancy" and/or unobtainable ingredients: agave nectar, coconut sugar, especially for things I just consider treats anyway and would be inclined to go ahead and use a bit of sugar in. Her site is definitely a go-to though and I like her basic almond bread. Her paleo bread gave me indigestion but it has something to do with coconut flour. I haven't figured out how much I can get away with in my food. It has some good effect on me but too much is not good either.

I have been using Silk Coconut milk when milk is called for and I need to avoid dairy for my youngest daughter when she stops by. I make up a little treat and I just don't add any oil to the dish and it seems to bake up pretty well without problems.
I haven't totally gone grain free (I still get some rice in. ) I have been eating quinoa and some buckwheat.
I am also taking Artichoke extract and just started around Christmas CoQ10 and L-carnitine. I don't go back for more blood work until July, so I have time to work, work, work. I also added some Coconut sugar (16 cal per teaspoon) _________________

mmmm I LOVE buckwheat. Alas, my husband isn't supposed to eat it - high oxalates. so, you don't add oil when you use the Silk because it already has oil in it it? or it's "liquidier" than reg milk? or what? Sounds like a good tip. I use "Better Than Milk" tofu milk when something calls for milk. Where I haven't figured out substitutes in SCD recipes is with yogurt, sour cream and creme fraiche - have any ideas? I supposed the hard part of the coconut milk from a can might be a good sub for sour cream or yogurt, what do you think? _________________ son - high ttg - 4/09, pos. biopsy 5/09

I have seen soy and coconut yogurts in the dairy case. (DD doesn't care for the texture)
they say you can take the full cream cans of coconut and dip the solid part off and even whip it for whipped cream. (I have one in the fridge now for 1 month....you think it is cold enough now? LOL.... I just haven't gotten back to it.)
There are cream cheese, sour cream subs in the dairy case at Whole Foods. I forget which name brand we bought for the DD and she like that new brand. (She doesn't like the Tofutti brand) I think it was possibly a coconut based product. She said it worked out well for her in texture.
(She is very texture conscience about foods.)

On Dr. Oz, Alton Brown made a chocolate refrigerator pie using melted chocolate chips, the Tofu on the normal grocery shelf Silken Tofu Lite, honey and vanilla poured into a bought pie crust (obviously you would have to make a GF crust.) Maybe you could use the Lite Tofu to sub for those that you were asking about since it has more liquid content. _________________

Thanks, Mrs. P. I have eaten the almond milk and coconut milk yogurts before but in some SCD recipes, plain yogurt is called for and I have yet to find a plain almond or coconut milk yogurt for savory dishes - something that would have that "tang". But who knows? I'll keep my eyes open.
Oh yes, whipped chilled canned coconut milk is DELICIOUS! You can make smoothies with it or just whip it plain (chilled) for your "whip cream" on things. It's crazy good with berries of course. I've also made creme anglaise with coconut milk and it worked brilliantly.
It's really only in savory baking and cooking that I'm concerned. I did use the Tofutti brand cream cheese as a sub in tart/pie crust over the holidays and was very pleased that it worked almost as well as real cream cheese in the recipe. But I tried using "Mimiccreme" almond & cashew cream in a creamy soup and it curdled. It was something where I didn't want the coconut flavor. I have another container of miccreme, maybe I'll experiment a little more with it but my first experiences were disappointing. _________________ son - high ttg - 4/09, pos. biopsy 5/09

OH MY! I finally made the 'whipped coconut cream'. I added some vanilla and a little bit of corn free powdered sugar. We could not tell a texture or taste difference except for some added coconut taste.
I am thinking of trying the Alton Brown Silken Tofu chocolate pie with that as a topping. (It may be a while so I can justify the calories. But I have discovered a new loved product!!!! (I already have a replacement can in the fridge cooling. _________________

Hi. It's me!
DH is needing to have some drastic dietary changes and I'm thinking Paleo is the ticket. I've been discussing it some with mom as well as others, and I need help getting this diet kicked off.
Issues:
1. I can't afford any cook books right now.
2. our grocery budget is limited.
3. we're working with the fact I have to do all the research and execution, and I'm chronically fatigued due to other stress-related issues that are currently ongoing. I'm willing, but the question is can I do it all?
DH's liver levels aren't good (looking like cirrhosis type levels, except he is a tea totaller), he keeps getting sick, and he has steadily been gaining weight though he is eating possibly 2 meals a day. (I say possibly, because I know some days he has a snack and only 1 meal) He's eating like a bird and is well over 300lbs. I don't know how much over, because no home scales go up that high.
He needs knee surgery in the future, and we're looking at possible adenoid/sinus surgery - and all of those require massive (100+ pounds) weight loss. We need a sleep study, but at this point ANY and ALL of his health issues are being chalked up to "you're fat - lose weight." - we're all Gluten free, but I know he loads up on dairy, bread and more carbs in every single meal. I've tried helping and adding in loads of veggies and fruits, but at this point - it's past the point of suggestions and just having to change what we eat every night and making sure every morning he has a meal to take with him regardless.
We've discussed exercising and pretty much every idea I've offered has been shot down. He does walk every day, but not enough to burn what energy he needs to for the weight to go. His job is largely stationary and not something he can get up and even do small exercises for. (lots of coding and programming) We can't afford gym membership at this time (it comes at a premium and we have no means of getting to/from gym outside of the city where he works.)
I've offered help, and at this point we're at the major dietary change route, so that hopefully we see progress and some weight changes so that he CAN and WILL exercise. I'm at the point of just throwing my hands up altogether, but with two children in the home that require both a mommy and daddy, it's not an option.
So, wise ones... please school me in the Paleo school of eating.
The links that have been previously posted, I am investigating and will print what I can.
Can someone please hand-hold me a bit and help me out here? I know I can do it, I just need accountability and a leg up. I'm eternally grateful for any assistance! |
