| I did not care for this at all, grainy, chewy, funny taste, any suggestions as to making this mix better? fluffier? vanilla? HELP! any other GF pancake mixes out there? |

We have been using a gf Bisquick mix that I found here on the forum. I just mixed up another batch on Friday. We keep it on hand as one of our staples. I have used it in several of the Bisquick recipies and it turns out fine. I thought that I would have to throw away all of my old Bisquick recipe books, but this substitute works just fine.

Here is a recipe for GF bisquick:
3 cups rice flour
2 cups potato starch
1/3 cup sugar
4 Tablespoons baking powder
1 cup powdered milk or alternative
1 Tablespoon baking soda
1 Tablespoon salt
1 cup plus 2 Tablespoons shortening
In a large bowl, whisk all dry ingredients together then cut in shortening.
Store in an airtight container
This is used like bisquick, any bisquick recipe will work. I use this as a base for pancakes, pot pies, muffins etc.
I keep some in my pantry at all times, so I can quickly make pancakes, cobblers or pot pies in a snap.

We use Pamela's Pancake and Baking Mix. Loved by GF and NGF'er alike

| I've only tried Bob's Red Mill pancake mix, which I actually had today, and the Trader Joe's kind. I think I overmixed the Trader Joe's which caused the pancakes to come out really really flat, but I thought they were really sweet and flavorful. I like the Bob's Red Mill because they're really really fluffy, but not near as much flavor. I think it's just a matter of personal opinion when it comes to pancakes. |

Buy some buckwheat and make pancakes with that. The Hodgson mill (sp) package has a good recipe on the side. It's not the same as a white wheat pancake but much fluffier than the GF mixes I have tried. _________________ Lauren

At our house we use the Bob Mill's all purpose gluten free flour mix and then use the pancake recipe. My children won't eat gluten pancakes now. So good, light and fluffy!

Hello stranger! Buckwheat pancakes...mmm! Just remember or in case you didn't know, BRM has stated their buckwheat is no longer GF due to potential contamination issues.
Just last night I read a posting on this blog about TJs pancake mix. She seems to love it. |

Make sure you pick up the mambo sprouts coupon books they have by the door. A decent number of those coupons are for stuff that's gluten free. _________________ Lauren

| They're normally at the service counter at my WF. Sometimes they have coupon books the size of dollar bills and those have the really GREAT coupons (free tuna steak, free gelato, free mixed baby greens, etc.). They always have the circular type coupon books though and those occasionally have a really great savings. |

You can ask for the mambo sprout booklets, they should have them and know where they are. Coupons include:
75 cents on 2 diamond nut thins
$3 on 2 Ian's dinner kits
55 cents on lundberg rice chips
a bunch of 50 cents off various power bar flavors
$2 on any natrol supplement
And a bunch of others. They are manufacturer coupons, so I save the powerbar coupons for triple coupon days at the local grocery store. I'll wait until Natrol is buy one get one free and then use 2 coupons to get some supplements almost free.
I'm definitely going to try the Ian's gluten free pizza dinner kit.
I always buy the bulk hummus mix there too. I probably shouldn't since it's in the bulk bins but it's SO cheap and good and it's not next to any gluteny mixes. _________________ Lauren
