I just started using a skillet bread recipe for my sandwiches... it's thinner than a pancake and rolls easily if you want to make rollups instead of regular sandwiches.
Combine 1/4 c any flour (I've used GF oat flour and buckwheat flour), 1/3c water, and 1/8 tsp salt. This will form a very runny batter. Preheat a small non-stick skillet over medium heat. Spray with non-stick cooking spray. Pour in the batter, cover and cook for 2 minutes. Remove cover, and cook for 3-5 more minutes. Flip, and cook another 3-5 minutes.
For crispier bread (which makes a good personal pizza crust!) keep cooking and flipping until it's where you want it. |
