I've never cooked with leeks before. I'm making a vegetable gratin for dinner tonight. When it says to only use the white part of the leeks do they mean the pure white part or can you use the light green section too? _________________ Steph |

I usually use the white part only - below the part where it starts to turn green and branch off into leaves. Also, be sure to rinse it well because it gets lots of grit between the layers.

Thanks C- I'll post the recipe when I have a few minutes. The gratin was really good! DH loved it. I'm so lucky to be married to a guy who loves his veggies. 'Course in my house there are only 2 choices when it comes to meals - take it or leave it.  _________________ Steph |
