*recipe adapted from Better Homes and Garden Cookbook, changes are included*

Ingredients:

1 lb ground beef
1/2 cup chopped onion
1 clove garlic, minced
1 16-oz can tomatoes, cut up
24 oz of canned tomato sauce
1 6-oz can tomato paste
2 teaspoons dried basil, crushed (I used 1tsp of basil and 1 of oregano, although I think I ended up adding more oregano later on)
1 teaspoon salt
8oz lasagna noodles (Tinkyada is what I used)
2 eggs
2 1/2 cups cottage cheese (or ricotta)
3/4 cup grated Parmesan cheese (or romano)
2tablespoon dried parsley flakes
1 pound mozzarella cheese, thinly sliced

Directions:

Cook meat, onion, and garlic till meat is browned. Drain off fat. Stir in the undrained tomatoes, and the next 4 ingredients. Cover; simmer 15 minutes, stirring often.

*do not cook noodles*

Beat eggs; add cottage cheese, 1/2 cup of the Parmesan, the parsley, and 1 teaspoon salt.

Layer half of the uncooked noodles in a 13x9x2-inch baking dish; spread with half of the cottage cheese filliing. Add half of the mozzarella cheese and half of the meat sauce. Repeat layers. Sprinkle remaining Parmesan stop.

Bake in a 375 degree oven for 30-35 minutes or till heated through and noodles are soft. I ended up covering mine about 25 minutes into it because the noodles seemed to be a bit chewy still. They came out nice and soft upon serving. Next time however, I will cover it 1st (for about 20 minutes) then uncover to brown.

I tried this the other day and it was great! I didn't use the whole box of Tinkyada noodle...and I was wondering if you had leftovers too? Thanks for posting!
