I think that's what's scariest about the proposed FDA limit to label something Gluten Free - the first real glutening I got at a restaurant had no detectable crumbs, flour, etc. and I had no idea until I got home and promptly started feeling awful. I suspect it was a CC incident with a tiny amount of gluten somewhere in an otherwise tasty plate of salmon and veggies, as that restaurant had been pretty reasonably gluten aware in the past, but...
Too Long Didn't Read digest: I know for me it doesn't take much, and I've only been GF about a year - so I am probably not the most gluten sensitive person out there.
Does anyone know if the companies that are reliable now plan to stay that way when the new labeling criteria are official? |
