Don't let the title scare you! The garlic is so mellow after you cook it you might not even know it's there.

Crock Pot Chicken with 40 Cloves of Garlic

2 Tbs butter
40 cloves of garlic, peeled (about 4 heads)
6 boneless, skinless chicken breasts
2 medium onions, chopped
4 celery stalks, chopped
1 tsp tarragon leaves
1/2 tsp black pepper
1/4 tsp nutmeg
1/2 cup dry white wine or chicken stock

1. Spray the crock pot with cooking spray.
2. In a skillet over medium heat, melt butter.
3. Add garlic cloves and cook, stirring often until they soften.
4. Using a slotted spoon, transfer garlic cloves to crock pot.
5. Place chicken on top of garlic.
6. Add the rest of the ingredients.
7. Cover. Cook for 6-7 hours on low or 3-4 hours on high.

Ostrich notes:
- I was expecting a really strong garlic flavor. But honestly I thought the onions came through more! It ends up tasting alot like chicken from chicken noodle soup.
- The high prep time is due to shelling all those garlic cloves. If you can find a way to do this the night before, go for it.
- DH and I subbed the white wine for GF chicken stock and removed 1 onion. (DH isn't a big onion fan.) We served this with plain white rice. Delish! Smile

I saw this dish prepared last week on the Food Network by Ina Garten. the long cooking time sweetens the garlic, that is why the dish isn't "overly garlicky".

She cooked hers on top of the stove, but it was basically the same recipe. While being pregnant, I can't stand a speck of garlic, but when not pregnant I plan on making this because I know my family will love it!

Yeah, I've seen similar recipes for the stove top. I just love the crock pot because it does all the work for me. Wink

I've been experimenting with the leftovers from this. I mixed some garlic chicken, GF chicken stock, water and cooked rice in a bowl. Bam! Instant garlic chicken and rice soup. Smile
