Modified from Allrecipes.com. I scaled the recipe in half, changed it to GF and baked it in a mini muffin pan. It made exactly 24 mini muffins. I also added half a can of diced green chilis. Jalapenos would be spicier, but my kids are wimps. Very Happy I know it seems annoying that I used half cans of things. But I just throw the other half of the chilis and creamed corn in a baggie and toss in the freezer. Then it's already measured when I want to make another batch. These stay moist for several days.

Savory Corn Muffins
Yields: 24 mini muffins

INGREDIENTS:
1 cup canned creamed corn (half of a 14.75 ounce can)
1 cup yellow cornmeal, divided
1/2 cup buttermilk
1 large eggs
Half of one small can sliced green chilis
1/4 cup melted butter
1/2 cup brown rice flour mix (see note below)
1-1/2 teaspoons white sugar
3/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon xanthan gum
1/2 cup shredded cheddar cheese

1. Preheat oven to 450 degrees. Well grease mini muffin pans

2. Microwave creamed corn in a 1-quart Pyrex-type measuring cup to a full boil (or in a medium saucepan over medium heat). Stir in 1 cup of the cornmeal to make a very thick, pasty mush. If the mush is not stiff, microwave an additional 30 seconds or so. Whisk in buttermilk, then eggs, green chilis and finally butter.

3. Mix remaining cornmeal with flour, sugar, salt, baking powder, soda and xanthan gum in a medium bowl. Pour wet ingredients into dry and stir until just combined.

4. Divide batter evenly among cups (I use a cookie scoop for this). Place a pinch of cheddar cheese on the top of each mini muffin.

5. Bake until golden brown on sides and bottom, about 15 minutes. Cool 5 minutes before removing from pan.

Brown Rice Flour Mix
2 parts brown rice flour / 2/3 part potato starch / 1/3 part tapioca flour

I've thrown the box away now, but I think it is Albers. They are owned by Nestle, who has good labeling practices. Last time I checked, they only produced corn in their plant.
