I have no Arrowroot on hand, and the health food store sells a little, tiny bottle for the cost of a new car (slight exaggeration Rolling Eyes ).

In a pudding recipe, can you substitute potato starch in the same measurement as corn starch?

A friend is making banana pudding for my hubby for Thanksgiving.

I wouldn't use potato starch.

I made a traditional Southern banana pudding a few weeks ago and used sweet rice flour as a thickener. I added 2 tablespoons and should have added a 1/4 cup. Also I only made it a couple of hours before we ate but the Mi-del animal crackers were also almost completely broken down. You might want to make it just an hour or so before you eat it.

I found a website last year that had substitutions on it. It said you could substitute any of the starches for any other, but i found that not to be true. I had to sub tapioca starch for cornstarch in my sugar cookies and they ran and didn't keep their shape. Subbing the starches DOES make a difference.

I agree with TEC as far as the pudding - potato starch isn't going to give you the result you want.

For pudding I would use tapioca. The potato starch will make it slick and not very good I would think.

I found that I can buy arrowroot at bulkfoods.com for pretty cheap. They also sell it at bobsredmill.com

You might be able to find it on amazon.com , but you would have to buy a case of it.

I usually buy it in 10 pound bags from bulkfoods.
