Hi! The type at Kroger/King Soopers (what they call Kroger where I live) is Kroger Crab Select. The package says "Crab-flavored seafood, made from surimi, a fully cooked fish protein" in white on a blue banner above a picture of a salad made with it.

It is 8 ounces & says "chunk style". I have had a "flake style", too, but there is none of that style in the house at the moment. I think the flake style was lobster flavored. It had a similar ingredient list to the one below. We all really enjoyed it, especially my little one.

The ingredient label says:
Ingredients: alaska pollock, water, potato starch, sugar, sorbitol. Contains 2% or less of the following: king crab meat. natural and artificial flavor, extracts of crab, oyster, lobster, scallop, shrimp and fish (salmon, anchovy, and cutlasfish), refined fish oil (anchovy, sardine), salt, rice wine, (rice, water, koji yeast, salt), modified tapioca starch, hydrolyzed soy and whey proteins, autolyzed yeast extract, disodium inosinate and guanylate, sodium pyrophosphate, color.

Then, in bold it has an allergy summary, which reads:
Contains: Alaska Pollock, Crab, Lobster, Shrimp, Salmon, Anchovy, Cutlasfish, Sardine, Soy, and Milk.

I looked up the ingredients I didn't know and found that koji is a type of fungus grown on rice and is what breaks the starch in rice into sugars for conversion into sake. You apparently cannot have sake without koji.

It seems to act in somewhat the same way yeast does in the production of other alcohols.

Disodium guanylate is made from seaweed or fish and is used in the same way MSG is - it is a flavor enhancer.
Disodium inosinate is also a flavor enhancer with the chemical composition of C10H11N2Na2O8P and seems to by a type of salt.
They both have Wikipedia entries.

As to the type at the Oriental market - I only have the Kroger brand right now, but when I go next time, I will purchase some & report back here.

One other note - Kroger has larger packages of imitation crab that *do* have wheat. You have to look for the smaller packages that don't. In the store I shop in, they are in a case next to the fresh fish counter, right next to the packages that do contain wheat.

I hope this helps some. I wish I had more in the house right now, but I usually only buy it when I am going to use it for a specific purpose.

Sushi is generally fine to eat, as long as you don't use the soy sauce. Some of the marinated meats in sushi may use sauces that contain soy sauce, such as teriyaki. Also, they may use flour to dust the meat or in the sauce to make it sticky. Usually the vegetarian and raw salmon sushi are gf.

One thing my husband found while doing research is that some kinds of imitation wasabi can have wheat in it. The restaurant we went to suggested that I ask for real wasabi to be sure that it was GF. Not sure if that is the case for all restaurants or not. Can't hurt to ask!!

We get sushi from Whole Foods a lot. We can read the ingredients and have GF soy sauce at home.

My daughter loves avocado rolls and we get it at a place near us (or make it ourselves). We have had some elsewhere that made her sick though - and now I understand about the vinegar. I had thought they only used rice vinegar - but your explanation now explains a lot....

I left a bottle of gluten free tamari sauce at my favorite sushi place. if you sit at the sushi bar and get to know the chefs they will tell you what you can eat. mine, said, as has been mentioned before, no eel or crab mix. yp
