This is a recipe from my pre-GF days that I converted. Still tastes great!
1 - 8oz. pkg. cream cheese, softened
1 stick of butter, softened
1 clove garlic, minced
2 tsp. dried herbs, such as dill, basil, thyme
GF pizza crust - I used the one from Robyn Ryberg's Gluten Free Kitchen book
1 c. grated, fresh parmesan
1 c. assorted vegetables, such as red pepper, onion, zucchini, mushrooms, artichokes, etc., thinly sliced
olive oil
salt & pepper
Directions :
Place the cream cheese, butter, garlic, and dried herbs into a mixing bowl. Beat on medium speed for three minutes, scraping bowl occasionally. Set aside.
Preheat oven to 400 degrees. Line a baking sheet with foil and spray lightly with non-stick cooking spray. Unroll the pizza dough onto the foil.
Spread 1/3 c. of the cream cheese mixture down half the pizza dfough, lengthwise. Top the cream cheese mixture with 1/2 c. grated parmesan.
Fold the pizza dough over the cream cheese and parmesan.
Spread 1/3 c. of the cream cheese mixture onto the top of the folded crust, then sprinkle with the remaining parmesan cheese.
Top with the thinly sliced vegetables. Brush the vegetables with olive oil and sprinkle with salt and pepper to taste.
Bake at 400 for 20-24 minutes.
Slice into one inch segments to serve.
***There will be left over cream cheese mixture - this can be stored in the fridge for several days. It is excellent served on your favorite GF crackers! _________________ "The electrocution was not my fault. You refused to wear the rubber underpants!"
