Today was our annual family "Thank-mas" gathering. I wanted to make some yummy foods that were safe for both Dad and Hubby, as well as tasty for everyone else. So I was thinking chicken (which is no surprise because I always have something chicken-y!). I thought about some chicken with an oriental spicy orange sauce. I looked under "entrees & main dishes" and the first thing on the list was "Orange Chicken" courtesy of Ostrich.
For dessert, I wanted a Pina-colada cake, so I took MrsP's basic yellow cake, and while it was still warm, I poured a mixture of sweetened condensed milk and coconut cream over it, let it cool and topped with shredded coconut and pineapples.
Both were quite yummy, and a hit with GF and non-GF folks alike.

(P.S. - To avoid cross contamination, I made an announcement beforehand to request that people not use serving utensils in more than one dish, since there are so many food sensitivities. Pretty much everyone knows Dad has some "weird" food issues, so everyone was very understanding and very careful. I did serve his plate before his food had a chance to be contaminated, but I kept an eagle eye on the table and feel quite secure in serving any leftovers.)

Well, your meal sounds like it was very yummy! (Wish I had been invited. LOL)

I am about ready to gear up for a cookie marathan.............next week we begin......off to rest up. LOL
