I have found a quick and delicious way to make pizza. I order Teff tortillas from La Tortilla Factory. (online) I put them in a 350 oven until they start to firm up a bit. Then I load with my favorite toppings and return to the oven until done. Piece of cake and pretty darn good. I usually make an extra one to take to work the next day. I feed these to people who are not on a special diet and they just love them!

I am still on the hunt for bread that is decent. I am going to Barnes and Noble today, there is a book signing there by a woman from Montana who claims to have created the perfect flour mix that tastes like regular bread. "Gluten-free Mama." I will post it if it pans out. All breads I have eaten can also be used as a weapon or a door stop! Here's hoping! Confused

My kids also love pizzas that way. They also like it that they can make it themselves without any help from mom. Very Happy

Thanks for the tip on the book. I hadn't heard of that one. Here is some interesting info from Amazon.com.

I am going to see if I can get it via Interlibrary loan. According to her website, the ingredients to her flour mix are: Ingredients: White Rice Flour, Tapioca Flour, Potato Starch, Almond Meal, Sweet Rice Flour.

Well folks, this lady has something! I tried several of her baked goods, I have to attest that the texture of her cookies was awesome! I do wish she had brought along some bread.....just my luck a news crew was there and had to film me flipping through her cookbook. great.....NOT! Twisted Evil

Can't wait to try her flour mix....she has it in all the local health food stores here in Billings. MT.

Maybe there is some hope with texture!!!!!! Laughing
