I got a call this week from an acquaintance at church this telling me that she was hosting the potluck dinner for our group and would I bring a dessert. She then remembered to ask me if I had any dietary restrictions and I reminded her that I have Celiac and what GF entails. She had already made the entree which was beef burgundy and assured me that the two tablespoons of flour that she had used wouldn't make a difference for me. Besides, she, herself was on a restricted diet that didn't include any dairy, wheat, or sugar. I had it in my mind that I wanted to bake a GF cake, but immediately backed off and racked my brain for a dessert that could encompass that many restrictions that also might include things that I already had around the house. I came up with a recipe that I had to heavily do some substitutions with, but I think that it worked! (I will have to wait till tomorrow to see if she can or will eat it.)
It is for VANILLA CREAM PUDDING
2/3 cup sugar (I used Splenda)
1/2 tsp salt
2 1/2 TBS cornstarch
1 TBS flour (I used GF flour mix)
3 cups milk (I used 2 13oz cans of Coconut milk)
3 egg yolks, slightly beaten
1 TBL butter (I used margarine)
1 1/2 tsp vanilla
Mix sugar (Splenda), salt, cornstarch and (GF) flour in heavy saucepan. Gradually stir in milk (2 cans Coconut milk). Cook over low heat, stirring, until mixture thickens and boils. Boil 1 minute. Remove from heat, stir small amount into egg yolks. Return yolk mixture to pudding. Heat to boiling, stirring constantly. Remove from heat. Add butter (margarine) and vanilla. Serve in dessert dishes.
I plan to add some sliced bananas and a cherry and call it a Tropical Pudding, I think. It isn't quite a vanilla pudding nor is it quite a coconut pudding, but it does taste pretty good. _________________ Sue Beyer |

Hi Sue,
Thanks for the recipe! Please give us the full report tomorrow!
Just be sure to stay away from the Beef Burgundy You might tell her right before she eats your wonderful dessert that you put 2 tablespoons of rat poison in it...after all...it wouldn't make a difference
Would you mind posting another copy of this recipe in the Dessert Forum? That way we'll have all the good stuff together!

So after I went to all of that trouble to try to figure out just what might work for the hostess and made it, she wouldn't eat it because the diet that she is on doesn't list those ingredients as being acceptable. She then told me that she is on that diet that is based on your blood type and only the foods that are listed on the piece of paper that she was given can be eaten. One of the other guests wouldn't eat it because she doesn't like coconut---even though the coconut flavor of this was very mild. Some days it just doesn't pay to try to accommodate people.
I served it with banana slices in pretty depression glass sherbet cups with a cherry on top and said that it was "Tropical Pudding". It tasted pretty good.

Sorry to hear you went thru all that trouble The bright side...more for you!! LOL!!
There's all sorts of diets out there, you never know what people can eat. I bet next time you'll ask heheheee

Truth be told, I thought I **had** asked enough about what she could eat when she told me that she couldn't have sugar, dairy, or wheat! What she should have said was that she couldn't eat anything except what was on her piece of paper and given me a copy of it. I might well have still been able to manage that if I had the information. She is a bit of a flake to begin with so I should have been warned, I guess.

Sorry the woman you made it for could't eat it. On the bright side, you have developed a great recipe that someone else could use. If someone comes here looking for a GF/CF pudding recipe, they will be happy.  _________________ -Colleen
