Yes, everyone that dreaded time of year has approached. The time of year when there are a 100+ Thanksgiving food related threads. I'm sorry I had to be the first to start the madness!
I need to compile 5 or 6 different dressing and/or stuffing recipes for our local group that meets Saturday morning. I've found two 'interesting' recipes that use waffles instead of bread, Fidd's New England Stuffing and Isto's Cornbread. I was wondering if any of you have any other really awesome stuffing/dressing recipes that you might be willing to share. We've got several newbies, brand newbies in our group and I want to make sure they've some TNT recipes to work with Thanksgivng recipes.
Also, for those of you who use bread, have you noticed that it tends to decompose or crumble almost as soon as you add the liquid ingredients? If so, how do you counteract that, or do you?

I don't know nuthin' about no stuffin', but I do know that much of the GF bread [at least the stuff I've had] seems to morph or decompose into a sloppy mess when liquid is added.

Sloppy mess seems like a good and accurate description. We have the same opinion on bread stuffing/dressing! |

My parents usually make the directions on the back of the bag 'o stuffing. Last year I told them to make it however they wanted, as long as they didn't stuff the bird with it. I just avoided the whole stuffing fiasco. I figure I have a few more school years to go before I can graduate to stuffing.  _________________ Ostrich :>--O==={

I'm glad you brought up this topic, cause I was going to do it myself.
Stuffing is one of my favorite foods and I so miss it.
When I made it last year, I pretty much threw it out. no one liked it, not even me.
I hope one of you GF gourmets out there know a secret that you're willing to share.  _________________ Toni

We only eat cornbread stuffing here in Texas...here is my recipe and our whole clan eats it and nobody knows it is GFCF and it is wonderful
first make cornmeal muffins
Corn Meal muffins (Bette Hagman Recipe)
2 cups white or yellow cornmeal
1 1/2 tsp salt
2 cups boiling water
2 eggs, beaten
2 tablespoons butter or oil (I use oil)
1 cup cold milk or substitute
4 tsp baking powder
preheat oven to 325 degrees. Grease 16 muffins cups.
In a large bowl, mix together cornmeal, baking powder and salt. Add the boiling water and stir with a spoon until smooth.
Next, stir together the eggs, butter (or oil) and milk (or substitute.)
Now combine the cornmeal mixture with the egg mixture and stir well. Pour into muffin cups and bake for 25-30 minutes.
Let these cool and then use them for your dressing...Ina loves these muffins and eats them all the time...she loves them with white corn meal the best, but I am not sure if you can get white corn meal up north...
Corn Bread Dressing
1 cup chopped celery
1 cup chopped onion
1/2 cup butter or oil
corn bread muffins, cooled and crumbled
One can GF chicken broth (I usually use homemade)
1 egg, beaten
2 tsp poultry seasoning
1 1/2 tsp ground sage
1/4 tsp salt
1/4 tsp black pepper
Heat oven to 350 degrees
Saute celery and onion in butter or oil until tender. Combine crumbled corn muffins and seasonings, then stir in the celery mixture. Finally stir in the chicken broth and egg. Pour into a greased 1 1/2 quart baking dish and bake for 40-45 minutes
This makes 6 cups of dressing...I honestly double or quadruple this recipe depending on how many people are eating.....a double recipe fills a 9 x 13 pan.
Usually, I mix up enough to freeze for later b/c Ina loves it...to do this, I just fill muffin cups with dressing, bake, cool, put in ziploc bag and freeze...this way they are in individual servings
