I read about a really easy way to have corn dogs over on the Delphi site. I don't know why I never even thought of doing this.

We had 'corn dogs' last night for supper and they were so good. Instead of using real corn, I made my mock cornbread recipe that I have posted, but you could make your own favorite recipe up.

Take GF hot dogs (we used AppleGate Farms dogs) and cut them up and just add them to the cornbread recipe. I then made up muffins using my silicon holders. (mine made 1 doz) Using my mix and 3 dogs. They baked up in about 20 minutes and tasted just like corn dogs. There was no grease to fry and no 'dipping bowl' to clean.

We had 5 left over and hubby and I polished those off today. I think that these would hold up well in a child's lunch box for a new dish to blend in with the other children during lunch period at school.

When I want a corn dog, I make a pan of corn bread in my small cast iron skillet. I think it's about 8 or 9" wide. I cut off the the 4 edges to make hot dog buns and then cut a sliver down the center and stick the dog in.

I don't think I've ever eaten a corn dog in my life.
This year at Stampede, however, I heard rumours that some vendors were offering deep fried pickles,deep fried cheesecake, and deep fried coke. Shocked Don't ask me how they deep fried the coke. I'm still gagging over the thought of deep fried cheesecake.

I could go for some deep fried cheesecake...

That's really creative MrsP, thanks! Very Happy Must try this out on DH. He normally picks the corn off and leaves the dog. Let's see him pick his way through this. Twisted Evil

I rarely to never eat deep fried foods, but I've got to say that deep fried pickle chips are AWESOME! I haven't had them in years though. I wonder if I would still think the same thing.

Deep fried cheesecake and coke...like gag me with a spoon!

Welcome Auburn! Which food item are you referring to? If you're talking about MrsP's mock corn dogs, she simply made her version of corn muffins with 3 cut-up GF hot dogs thrown in the batter.
