My son's boy scout troop is doing a project using chow mein noodles to make a birds nest. I do not know of a GF alternative for chow mein noodles. I suggested using tinted coconut instead, but I'm not sure yet if they will take me up on it.
Does anyone know of a GF chow mein noodle? You know - the crunchy noodle things that you eat chow mein with.

I don't think I've ever had chow mein. Are they sort of like fried wontons?
I wonder if you could boil spaghetti and then shape them into nests and place them in the oven to dry out. I can't imagine that they would taste good though.
I wonder if he could use cereal(gf corn flakes) mixed with chocolate to make birds nests?
Coconut sounds like the best bet but how will it keep the shape? With chocolate?
There must be something obvious that's been overlooked. Aren't Funyons sort of shaped like wonton crisps? Will they be eating these? |

I think that I have read that you can boil rice noodles (you know the ones in the shape of skinny spaghetti) and the pat them dry and fry them until golden and wallaah...chow mein noodles......if you try it let us know if it works......also.....what about those clear crispy noodle type things that are served with lettuce wraps at PF Changs, would those work? they are the same size and similar texture to chow mein noodles....Good luck  _________________ Connie, mom to Ina, 13 y/o with CD |

Thanks for the opininons, all. I am going to try the BRM recipe and see how it works out. I think I'll also try frying some cooked rice noodles to see what happens. If all else fails, I will order the ones Al posted.
