Championship Artichoke Dip
Get Togethers with Gooseberry Patch
2 cups grated Parmesan cheese
2 cups shredded mozzarella cheese (Monterray Jack also works well)
1 cup mayonnaise
2 cloves garlic, minced
16 ounce can artichoke hearts, drained and finely chopped
1/4 cup green onion, chopped
TEC Notes: I use frozen artichokes that I get at Trader Joes and they are great in this recipe. I've adapted the directions to make my life easier. Place the artichoke hearts and garlic cloves in a food processor and pulse until finely chopped. Add cheese and mayo and pulse a couple of times until the mixture is blended. Place in ramekins and bake until melted. Normally takes less than 45 minutes. I've also refrigerated it for a few days before cooking it. I've also frozen the uncooked dip and it was still good.
Combine all ingredients except onion in and 8" x 8" baking dish; mix thoroughly. Bake at 375* F for 45 minutes. Sprinkle with green onion; serve with crackers, chips or bread. Makes 7 cups.

Nope, I don't have a beer bread recipe. I have a recipe that I loved as a kid though. I'll try to convert it this weekend and will post the recipe.
Will likely have the time if it doesn't quit snowing and stays cold.  |

Ooh--I *just* saw this!
I love artichoke dip! I so have to make this now that I actually have a counter on which to prepare it!
(*she says as she rinses the plaster dust off of her blender*)

I just made a quarter of this recipe plus a few extra artichoke hearts and spread the majority of it on a Chebe pizza crust (only made half of the package). Oh my gosh, it was sublime!
Will add a tiny bit of fresh lemon juice when I use it for pizza in the future. A little punch of acid would be nice. |
