I am interested in any recipes that use "soy flour" or within a variety of other GF flours.
I also want to know how I can find some cookie recipes that a "crunchy" and good in taste. I tried a Chocolate Cookie recipe from the Gluten-Free Kitchen cookbook and they were awful, very soft and nearly fell apart. |

Try the double chcolate mint cookie recipe I posted in the recipes folder last week. They are crunchy and taste good. It uses bette hagman 4 flour bean mix (garfava/sorghum/tapioca/cornstarch blend) I made them with peanut butter chips this weekend, and they were just as good as the mint ones.
We also really like the chocolate chip cookie recipe from the revised gluten free gourmet. You cannot tell the difference between them and regular gluten cookies.
Another good recipe is the shortbread recipe from the 125 best gluten free recipes book by washburn/butt http://www.amazon.com/gp/product/0778800652/sr=8-6/qid=1139867279/ref=sr_1_6/104-9318204-2228765?%5Fencoding=UTF8 They are quite tender and delicate, not crunchy though. My non GF husband ate a whole batch in one day.

Hi Brian,
I dont know how much soy you were looking for, but these have some.
Cookie Daze Ranger Cookies -These don't have a lot of soy...but they sure are tasty!! These are crispy & chewy
These have a good bit in... We have used these as Christmas cookies, but they're good anytime of year These are kinda crispy.
GF Sugar Cookies:
1 cup white rice flour
1/4 cup soy flour
1/2 cup corn starch
1/2 tsp. salt
2 tsp GF vanilla
1 tsp GF baking powder
1/2 cup softened butter
1/2 cup + 1 tbsp. sugar
1 egg
Preheat oven to 375
Combine the flours & powder - set aside
Cream butter, sugar, egg & vanilla
Add everything to the creamed mixture
Roll into balls (like peanut butter cookies) and place on ungreased cookie sheet. Flatten.
Bake 6-10 min.
This makes about 3 doz cookies
Butter Cream frosting:
4 cups powdered sugar
1/4 cup softened butter
1/4 cup solid vegetable shortening
1/4 cup milk
1 tsp vanilla extract
food coloring is optional
This make a huge batch of frosting. Peg makes a 1/2 batch for this cookie receipe. But frosting keeps well in the fridge (about 1 month).
