I just got this from Taco Del Mar. They make really good Mexican food. Here is the letter I got:

Taco Del Mar Wheat-Free/Gluten-Free Items (2004)
This category of menu items was developed to assist individuals with conditions such as a wheat allergy or gluten intolerance, which is also referred to as gluten-sensitive enteropathy, celiac disease, or non-tropical sprue. Gluten is a protein component of some grains. For people with gluten intolerance, eating gluten damages the intestinal lining, compromising the absorption of many other nutrients. Besides wheat – rye, oats, barley, spelt, triticale and kamut also contain gluten. To manage gluten intolerance, it is important to avoid these and any foods made from them.

Taco Del Mar wheat-free, gluten-free ingredients:
Corn Tortilla
Tortilla Chips
Taco Shells
Marinated Boneless Chicken Filling
Spicy Ground Beef Filling
Seasoned Rice
Refried Beans
Seasoned Black Beans
Whole Pinto Beans
Monterey Jack/Cheddar Cheese Blend
Guacamole
Salsa
Sour Cream
Green (mild) sauce
Red (medium) sauce
Habanero (hot) sauce
White sauce
Lettuce/cabbage
Breakfast Items: Eggs, Hash Browns, Diced Potatoes

Dream up your own creation, or choose the Taco Del Mar menu items made with only wheat-free/gluten-free ingredients.
Hard Taco with chicken or beef
Soft Taco with chicken or beef on corn tortilla
Veggie Taco on corn tortilla
Baja Bowl – chicken or beef
Cheese, Chicken or Beef Enchilada on corn tortillas – Do Not use ENCHILADA SAUCE as it contains gluten, use salsa, red, green or habanero sauce instead.
Super Nachos
Chips & Salsa
Rice and Beans
Kids Chips and Cheese
Kids Taco – chicken or beef on hard taco shell or soft corn tortilla
Breakfast Taco on corn tortilla or hard taco shell
Egg & Cheese Taco on corn tortilla or hard taco shell

These items contain wheat/gluten:
Taco Salad Shell
Tortillas – Flour, Wheat, Spinach, Tomato, Carb Modified
Alaskan Cod
Roasted Pork in mole
Enchilada Sauce
Cookies
Brownies

Important Note: Every effort was made to identify menu items that do not wheat/gluten. Occasionally alternate suppliers and brands are used or products are reformulated - which may result in different ingredients. At Taco Del Mar, we make every attempt to keep our gluten-free list current, but we welcome your request to check the ingredient labels on any products in the shop you visit. Since this is a restaurant environment, wheat-free/gluten-free ingredients may come in contact with ingredients that contain wheat & gluten. For instance, a corn tortilla may be placed on a work surface that has been used roll a flour tortilla. For specific guidance on this issue and your level of sensitivity, contact your physician and registered dietitian. I have eaten at Taco Del Mar twice since the letter. I had Chicken Taco's at one and a Chicken Taco salad at another. Both were excellent with no reactions from me. Delicious!

I eat at Taco Del Mar several time a week. My blood levels dropped all while eating here. Good stuff for us in the Northwest!
