Recipe for Cake Doughnuts

Hi. My name is Jennifer. I don't have Celiac but my husband does. I read here often but have never posted. Just thought I would share a really good recipe I found for cake doughnuts the other day. My husband and son loved them (not to mention me Very Happy ). They were really easy to make and very inexpensive. Hope you enjoy.

Ingredients:
3/4 cup cornstarch
2/3 cup potato starch
1/3 cup sugar
1 tablespoon baking powder
1 egg
1/3 cup milk (hubbie is casein free also so I used almond milk)
1 teaspoon xanthan gum
1 teaspoon salt
2 tablesppons oil
1 teaspoon vanilla flavoring


For Frying:

2 cups vegetable oil

Topping:

powdered sugar

Directions:

Combine all ingredients in medium bowl. Mix well to remove all lumps.
Heat oil in meduim saucepan to 375 degrees. You can use an electric fryer if you wish.

Pat out dough on "floured" (with cornstarch) surface to 1/3 inch thickness. Cut out doughnuts with round cookie cutter. Use a round object to remove center of doughnuts. Place doughnuts and holes into hot oil. Do not crowd them. Once they are lightly browned on both sides remove and place on paper towel to drain. Roll doughnuts (while still warm) in powdered sugar. (I put the powdered sugar in a large zip lock bag and dropped the doughnuts in the bag and gently shook them to get them covered - it worked much better).

Hope you enjoy these as much as we did. They made a nic after school snack for my son and we thought they'd make a nice treat on a weekend for breakfast.

My grandmother used to make homemade donuts for me when I was a child. She'd fry them up while my sister and I would go help my grandfather go milk the cows. They'd be ready when we came back in. The wood cook stove had warmed up the kitchen, the fresh milk and the donuts, Very Happy Brings back some good memories.
