Thanks for posting those web sites in case someone has an interest in them. I had read through a lot of that information. I guess I was just pointing out that a person can buy Tapioca Flour. I get mine from Gluten Free Pantry and the Tapioca Starch from the health food store. I am just experiments because I had noticed in different mixes some use Tapioca Starch as an ingredient and others Tapioca Flour. I have seen in a few ordering places where you can get both. It's just that the health food store where I get my flour only offers one and since I am experimenting I needed the other.

Hi Donna,

Can you post where you find both of them together? I'd like to see that. It's kind of like SuperMan and Clark Kent...you never see both of them together at the same time. LOL!!

Goodness Al, I am sure not superman and I don't have a clue where I saw them together at. I know it was when I was searching for a place to get buckwheat cereal and doing a search on the two products. I was looking at almost every GF source I could fine. I will look around but I am not going to get stressed out over it. I hope to find it for my own mind. Al this was started because you said "I don't think there is a tapioca flour" and since you weren't for sure I was just letting others know there was. I wasn't out to start a war. Guess this makes good reading for others. Al againist Donna

Al, I didn't have much time to look this morning and must stop and get ready for church but in the short time I did look I wonder if what I saw was something like this.... Above this site www.americankeufood.com is listed tapioca starch and tapioca flour. I went and looked and they didn't offer both. I sure didn't mean to mislead anyone and for that I am sorry. I am still going to look because now I am curious.

Hi Donna,

Oh Heaven's NO...this isn't a war!! It a curiosity... LOL

It can be confusing...like then they it call Potato Starch Flour. It's like - make up your mind - is it starch or flour??!?!?!?! It's really potato starch...NOT potato flour.

I not saying that it doesn't exist, I've just never seen BOTH products together. Smile

I'm sure you know, but just for clarification sake there is product known as potato starch and a totally different product called potato flour. About 6-7 years ago I bought potato flour instead of potato starch. Needless to say, the results of whatever I made were horribly unedible. As a result I refused to bake anything with 'funny flour' until 8 months ago. Bob's Red Mill sells both products.

Hi TEC,

Thanks...yup potato starch and potato flour ARE 2 different things.

PS is the starch that is extracted from potatoes
PF is ground up potatoes.

Many times people, companies will use the word flour in a generic sense. Like the potato starch flour naming convention..

I didn't mean serious war just curiosity war. If this was real war I would go private posting. Does that make since? Because of seeing some mixes saying tapioca starch as an ingredient and seeing tapioca flour on another I was confused. In short after hours and hours of research and phone calls I gave up. I just bought both to try and see if there was any difference and at this point I don't think so in the baking world, especially when on my box of Tapioca flour for ingredients it says tapioca starch. I wish I had my box that I bought that said tapioca starch and could look at the ingredients, but when I open a box up I put it in a different containerand now I don't have the box. My husband, the master chemist and my son-in-law the almost Phd chemist, says there is a difference in the molecular structure of what constitutes a starch and a flour. He started to go into drawing all these drawings and I told him he could draw all he wanted and it wouldn't mean beans to me and I really didn't care. I had seen potato starch and potato flour and wondered the difference and quicky learned why. I think I hijacked this thread, sorry.
