First for these you need a donut maker -- they don't make these anymore. I bought one used at a thrift store. I see these on eBay too. Yes, you are taking a risk of contamination but I looked it over very well and it was not scratched or damaged and then I scrubbed it really well several times. My donut maker was $6 and cooks 2 donuts at a time in about 3 minutes. They are baked, so less fat than a deep fryer. I took the picture as the last ones were baking, so it is a little messy. My non-GF daughter said they were good and she ate three of them. We have made these several times now.

Cherry Donuts Yield 9
1 egg
1/2 cup sugar
10 chopped maraschino cherries and some juice + some milk replacement or water to make 2/3 cup
2 1/2 Tbsp vegetable oil
1 cup GF flour
2 tsp baking powder
1/8 tsp salt

Beat egg. Slowly add sugar. Stir in milk and mix thoroughly.
Add oil and vanilla to mixture. Sift all dry ingredients together and blend into egg mixture. Beat slowly for 30 seconds or until batter is smooth.

If batter thickens, add 2 to 4 tablespoons of liquid. Batter should always pour easily.

Bake approximately 3 1/2 min. If desired, glaze with a little powdered sugar, shortening or margerine and enough liquid to make desired thickness (thinner than cake frosting).

Flour mix I used:
1/8 cup Almond flour
1/4 cup Buckwheat flour
1 cup Asian White rice flour
1 cup Bob’s Red Mill brown rice flour
Extra flour was saved for another batch in ziplock bag -- keep in fridge

PLAIN DONUTS FULL RECIPE 2 DOZEN

2 eggs

5 tablespoons vegetable oil
1/4 teaspoon vanilla
2 cups GF flour mix
2 teaspoons Xanthan Gum
4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg

Beat eggs. Slowly add sugar. Stir in milk and mix thoroughly.
Add oil and vanilla to mixture. Sift all dry ingredients together and blend into egg mixture. Beat slowly for 30 seconds or until batter is smooth.

If batter thickens, add 2 to 4 tablespoons of milk. Batter should always pour easily.

Bake approximately 2 ½ to 3 ½ min. Makes about 24 donuts.
