I don't eat fried food, but I Googled and came up with this one from celiac.com...
This recipe comes to us from Jean in Ohio:
Blend in plastic bag
1/2 cup GF flour (I use Hagman's first blend)
2 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 400. Melt ½ cup butter or margarine in shallow baking pan in oven. Shake chicken pieces in flour mix, Dip in melted butter, turning to coat evenly. Bake uncovered for 1 hour, turning at 30 minutes. Bake boneless chicken for 30 minutes. Bake nuggets for 15 minutes or until cooked through (Also can be used for coating pork chops. Bake at 425 for 15 minutes for ½" thick chops, 5 to 10 minutes longer for thicker chops.)

I bought some GF crispy chicken mix by Kinnikinnick at a health food store. The insructions are simple enough-cover moistened meat with coating mix. Bake, pan fry or deep fry. I used thawed boneless chicken breats and added butter on top of each breast for moisture. I baked for 45 Minutes on 350 degrees until tender. Caution: If you have diabetes I have found Kinnikinnick products although tasty to contain a lot of Carbohydrates.

| I soak my chicken in butter milk for a few hours( if you dont have buttermilk just use reg milk and a little lemon juice or vingar) then I put it in a container with white rice flour and spices, paprika , garlic pepper and salt and so on then I shake it and let that sit for hour turing every now and then. Then I heat up skillet with oil med high heat put chicken in cook on both sides for about five min. Then I cover and turn down the heat and cook for another 20 min turning once. |

I made chichen last night and it turned out wonderful. First I put about a cup of rice flour in a ziplock bag and put my chichen pieces in it and shook it until they were well coated. Then I put them on a broiler pan and topped them with salt, pepper, garlic, and onion powder. Finally, I spritzed them with olive oil and baked them at 375 degrees, turned them once, spritzed them again and took them out when they were golden brown and done inside. They tasted great, just like fried chicken, but less fat. My husband even said it was better then his Mother's chicken.  |

I dip my chicken in Sylvan Borders all purpose flour and fry in like my regular fried chicken and it was great. It also made great creamed gravy.

I dip my chicken in milk and salt and pepper in potato starch and then fry in olive oil.
You can also make chicken using bread crumbs and make nuggets for the freezer. If you want the recipe for that, let me know and I will post it. I found chicken tenders on sale here for 99 cents a pound and I just made 34 tenders for the freezer today. (I will have to bake bread tomorrow before I can make more tomorrow.) _________________
